Vinegar is a great cleaner, but do be aware that not all surfaces can take the acid.
As noted in another thread, grout's another one, in addition to marble, that should not be cleaned with vinegar. That can make the situation a little dicey if you have employees and tell them to use vinegar on certain floors. Odds are great that they'll pick one cleaner to use on all floors at a job site.
I'll guess that's why few companies use vinegar for cleaning. Ditto for ammonia, a nice neutral that's not worth the hazard if you use bleach products and have little training or high turnover with workers.
