Importance Of Grease Traps in Commercial Kitchen

A grease trap is a plumbing device in a box shaped that is placed between the kitchen drain and the prime drainage system.In restaurants, hotels and resorts, we can never estimate how much wastes will occur and some things do not soluble in water like oils, soaps, hairs and in result improper functioning of the Drains occur.
So, these grease traps protect from blockages caused by greases and solid and bad odours.So, Grease traps Play a important role in commercial kitchen as compare to Domestic Kitchen..

Commercial cooking facilities like restaurants, schools and resorts are required to install grease traps in all sinks, dishwashers, and floor drains. It traps cooking grease, oils and fats while letting waste liquid run down the drain.
Commercial grease traps must be cleaned on a regular basis to ensure the good working condition of this device.

Hmm, this is quite an interesting statement. Are there any risks involved with grease traps? I've never heard of such a thing before.
