Products for cleaning 20 years of grease

I have to clean a church kitchen which hasn't been deep cleaned in 20 years. Does anyone have any advise on which products would make this job easier. I have read somewhere that Zep Heavy Duty Degreaser might work but I would like to know what the pros use. Also, I seen a hand held steamer somewhere the other day and would this be a good way to eliminate the grease? Another question I have to clean 2 industrial ovens which haven't been done in forever and what would you recommend for this.

I can't help on the equipment, but for floors and walls I would use Tide floor powder and a power washer.

We recently perform a deep clean on a restaurant kitchen and start with a degrease called ezee-blue... it was not strong enough to dissolve the grease or oil from the fryer or hood but I had order a degrease from parish supply made by elements...its elements super duty degreaser...i arrive half way through the job...boy, did that stop work damn near instantly. I was able to spray and wipe grease off of the range hood vents and interior walls. I literally saw the grease dissovle as soon as I sprayed it on. The grease was about 5 months old according to the chef/owner but it was still made that part of the job a lot easier. It will be a fight with 20-year old grease but its worth the shot. Spray it on...let it go to work...while you do other tasks...go back spray a little more on and see what happens...here is a link to it on http://www.parish-supply.com/cleanworks_4.htm

Remove 20 year old grease stains

Try using Genesis 950. This will work perfect for that. It is a degreaser which actually breaks the bonds of stains and lifts them. Car dealers use it to remove grease and oil from their flooring. That's how good it is. I personally use it in my kitchen to clean my oven. It works better then anything I have used. I know you can get it in commercial sizes, I have never done this as i don't have that much to clean, but you might want to try a quart to make sure it does the job. I'm sure it will.
